The Coconut Miracle Pie!

Here’s another great easy dessert recipe. The prep is no time and no mess, but the result is a “big ole pie” that everyone will love!

First, get out your blender and dump in 1 cup of sugar, 4 eggs, 2 cups of milk, 1/2 cup of melted butter, 1/2 cup of plain all purpose flour, 1 running over teaspoon of vanilla, 1 cup flaked coconut, and a dash of salt. Blend well, then pour into 10 inch pie pan. Bake it a 300′ for 1 hour. The miracle of the pie is that it makes its own crust. The video below will walk you through all the steps and show you the wonderful results. You Work to Avoid Confrontation With Your Heart

I write about this today as a dear friend told me this was her reality. Working two jobs to avoid confrontation with her heart. I find this to be a true way of  life for many. I think so many of us “keep busy” whether it’s working a job, or obsessing about most anything that keeps our inner most feelings preoccupied. Simply put “not dealing with what could ultimately be self fulfillment” . We are not happy in our heart of hearts.

I understand all of this… as it is a coping instinct, but it will only work for a short while.  And when it fails to satisfy, then and only then will we deal with our heart. It takes courage and strength to focus on ourselves, but who else knows our needs more!  No one can make us happy and no one knows what our inner most feelings are except ourselves. As William Shakespeare once said…”to thine own self be true, and it must follow,as the night the day, thou canst not then be false to any man”  This that I write, we have all heard before, but we must start living it. Life is way too short to live it, avoiding confrontation with our heart! It’s up to you… find your peace. Stephen Spurling

Ninni Zucchini Recipe

I was never a fan zucchini, but Ninni Zucchini is excellent! You ask what is ninni zucchini? It is a great easy recipe to add pizzaz to your zucchini! To see the video with step by step instructions just click on the link below. Here’s the basics:

Boiling  4 to 6 med size zucchini for about 5 minutes, just making them a little soft. Then cut them in half and clean (hull) out the seeds. In a bowl mix 1 cup of Dukes Mayonnaise , 1 cup of feta cheese, 1/2 cup of shredded parmesan cheese, 1 tablespoon of garlic salt, and a tablespoon of basil. Take this well mixed filling and put it into the hull of the zucchini. then add extra parmesan cheese to the top of each and sprinkle more basil on too. As for me, I also add a little more pepper here too.  Then put them in the oven on 350′ for about 20 minutes. In the last 3 or 4 minutes you can turn the oven on broil, but watch very carefully… this trick makes the parmesan cheese on the top brown nicely. Your friends will love your ninni zucchini, and you will love me for sharing it with you! It’s one of my favorites, and remember I never liked zucchini until I had it cooked this way. Stephen

Are You Living A Happy Life?

                  I am a firm believer that we all possess the ability to get what we want in life. Why it is harder for some than others, I can’t answer that.  One of the biggest obstacles for many is not  knowing the difference between contentment and happiness! I realize that it is so much easier to live being content, but at the end of the day, have you lived your life to the fullest? Don’t just live with contentment. We all are deserving of more.  This is what life’s journey is all about… living the best life we can!  We are special and unique in our on right, so take the leap of faith today to get… one , two , maybe even three steps closer to your wants and desires. Remember…. “The fruit is always at the end of the limb!” Meaning… we have to go out of our comfort zone sometimes just to get what we really deserve!  And we all deserve a bite of that sweet fruit! So start climbing toward your goal of  happiness, and enjoy the view along the way! Stephen

Painting An Exterior Brick House

I have painted many brick homes. I usually find a reason to do this as there are very few brick homes that look good with natural brick. Let me explain myself. I usually renovate older homes and the brick that was used back then wasn’t as pretty as the brick used today. I also like the fresh clean look of painted brick. The home I am featuring in this blog was in terrible shape, the brick had many mortar cracks, and we all know that when you do a mortar patch it never matches the existing mortar, and stands out like a sore thumb! Well to be honest, I would have painted this home whether it need mortar repairs or not, the natural brick just wasn’t attractive.

A quick FYI about mortar cracks, they are ok if they run in a”stair step” fashion, of course they need to be filled (re-pointed) to keep moisture out. If the mortar cracks run horizontally then it is can be an indication of a shift in the foundation, a more serious fix, and a whole other conversation.

I will let you decide which is better, painted brick or not. I realize the “before” picture is not a fair comparison as it was taken before it was renovated. However ,you must admit the painted brick “after” picture really brings the home back to life! It is an updated 50’s ranch! Stephen   

Silver Spoon

I still have that little silver spoon my mother would only feed me with.  I was literally born with a silver spoon in my mouth! As we all know, this saying became a derogatory term used to accuse ones upbringing as being privileged, to being plain spoiled. I certainly couldn’t be called spoiled in my upbringing, far from it. But my mother still used a silver spoon and not because she thought of it as a shiny status token. No, she thought that babies should only be fed with a silver spoon because it was healthy. She did not like plastic or metal and she had been told by her mother that anything other than a silver spoon could carry germs. This is true and it is a tradition that began during the plagues of the Middle Ages for the same practical reason, that it was safe. Silver didn’t spread infection or germs that could kill you or make you sick! Silver ware in general was developed for practical hygienic reasons. The baby’s silver spoon was a frontline weapon against disease and infection.

Sometimes We Need To Be “Propped Up”

For all the strong people in the world and we are many, I say sometimes we need  to be “propped up”. Think of all that we manage in our day-to-day lives  and being strong makes us take on the problems of others too. Sometimes I just need someone to hold my hand, and not me holding theirs. I love being in control or thinking I am in control of most everything, but sometimes I need to give up control and be the vulnerable person I am. I carry the weight of the world, but sometimes I would like to be carried. This is  why I have faith. I think this is where  all our strength comes from, way deep down in our faith.           I have been taught to believe in God my entire life… Christianity… and I  have faith in my heart  of  a higher power helping me through. I have always landed on my feet no matter the situation. I attribute it to my faith in a higher power. So when I say hold my hand , he does! When I say I give up, he doesn’t!  When I need to be carried, he does! Haven’t you always heard “we are strong in numbers”… well this is why, I never walk alone!  Stephen  Spurling

Those Dang Squirrels!

This is a priceless story about a woman’s love for her birds and her hatred for squirrels… This woman is real, but because she had to stoop to such drastic measures to protect her bird seed from the squirrels, I won’t use her real name. For the sake of telling this true story, I will name her Helen. Helen is a true prim and proper southern belle, standing all of 5′ 2′ with a 90 pound frame. She has impeccable taste in the way she dresses and alway has the best shoes and purses money could buy. Even in her 90’s  her lipstick is perfectly blotted around her tiny lips. ( you must be able to envision this woman)

Helen loves her yard and her birds. She had many bird feeders, her yard was a bird sanctuary, or at least it was to her. Well… we all know that if you have a bird feeder, you are really feeding the squirrels! Helen fought off squirrels for years. The humane way with the “have a heart” traps, and when she would catch them, she would carry them 5 miles away and release them in the park. She had always been told at that distance they wouldn’t be able to find their way back. Helen swore they were making their way back to her property.  Helen decided to get a bb gun and she tried that for a while, but then everyone became concerned with a 92-year-old woman shooting a gun, so her family  took the gun away. Well now she would have to go back to the traps. Knowing in her mind the squirrels were coming back to her yard… that wasn’t a solution.

I must tell you how we found out her new way of getting rid of the dang squirrels. One day her daughter-in-law,  Julie stopped by to visit. Helen was out in the yard doing her usual thing. Julie noticed  the wheel barrel was full of water, and said mama ,” why do you have the wheel barrel full of water?” Helen immediately chimed up… don’t go over there! Julie’s curiosity was peaked as anyones would be. Julie is now staring at the wheel barrel full of water and notices bubbles coming up from the water… Julie inches closer and now sees the true essence of what was happening. Helen has caught a squirrel in her trap and has put the squirrel in the wheel barrel full of water with a brick on top!  Helen is drowning the squirrel!

Julie sprung into action, immediately pulling the  caged squirrel out of the wheel barrel and throwing it to the ground in both fear and disgust! Julie was so upset she told Helen how disappointed she was in her actions … Helen simple explained that she was using the resources she had to eliminate the pesky squirrels.

This story has always fascinated me  because it shows the determination of a woman to successfully protect what is hers. All women have this innate ability to rise to any level of being  that is required to solve the problem at hand. Every woman has a little “Scarlett O’ Hara” in her. So when I say…”to meet Helen you would think, she wouldn’t harm a fly”, and by all rights I would be correct in saying so.  But she is a women who had a problem that needed resolve, and she resolved it!

Just so you know the squirrel did survive. Julie made sure of that. I even heard later that they had taken away Helen’s ” have a heart” trap. I am sure as long as Helen has a breath in her body, she  will be fighting those dang  squirrels!  Stephen Spurling
